Chef Ian McInnes will prepare a feast of regional produce accompanied by fine wines from this thriving cool climate wine growing area.

Entrée - Confit King Trout, Brook Trout Roe, Crushed Taggiasca Olives, Shallot Essence, Confit Tomato

Main - Yarra Valley Pinnacle Roast Beef Tenderloin, Persian Fetta Mash, Asparagus, Pinot Jus, Truffle Salsa
